The Low-Sodium Table
A cooking class tasting two versions of the same soup

Heart-healthy, tasty

The doctor said 2,000
milligrams. We say: eat well.

The diagnosis arrives with a number and no recipes. We are the missing half: a teaching kitchen and coaching practice where low-sodium cooking learns to be delicious - acid, umami, herbs, and technique, tasted side by side until your palate recalibrates and the salt shaker stops being the point.

  • ◆Tasting-based classes - you learn by mouth, not handout
  • ◆Classes capped at eight, average age 66
  • ◆Coaching by registered dietitians, cardiac focus
  • ◆Family members included, always

The flavor problem

Salt-free food fails. Flavor-first food succeeds.

The two versions of the same soup sit in front of you - one at 700mg per bowl, one at 150 - and the class begins with a blind tasting. When the low-sodium bowl wins, and it regularly does, the whole project stops feeling like deprivation and starts feeling like cooking.

That is the method: acid where salt was, umami built from scratch, herbs treated like ingredients instead of garnish, and heat applied with intent. Your palate adjusts in weeks - this is well-documented and quietly thrilling - and the cooking you learn here travels to every diagnosis-friendly table for the rest of your life.

The kitchen

Dietitians who cook, first

01

Ruth Kowalski

Founder, RD

Registered dietitian, cardiac specialty, trained at a cooking school in Lyon because she got tired of watching heart patients eat sadly. Teaches the tasting method herself.

Marco Ybanez Chef-instructor

The flavor half: twenty years of restaurant cooking, now in service of the 150mg bowl that beats the 700. Believes bitterness is a technique and proves it weekly.

Anita Desai RD

Registered dietitian, hypertension focus, and the coaching practice lead - the one who translates the classes into your Tuesday kitchen on the phone.

Joy Bergstrom Client care

Schedules classes and coaching, mails the spice-kit starter box, and remembers everyone's grandkids by name. Retired cardiac nurse; nothing rattles her.

The complete change

Six classes plus sixteen weeks of coaching plus the labs review (with your okay) and physician coordination. The full recalibration, supervised.

All prices USD. We are nutrition education and coaching, not medical treatment; we never change doses or treatment plans - with your okay, we coordinate with the physicians who manage them. Family members attend classes free; the household cooks together or not at all.

How it works

From consult to Tuesday dinner

01

The tasting

Two soups, blind. The class calibrates your palate and your skepticism in the first twenty minutes - whichever bowl wins.

02

The method

Acid, umami, herbs, technique - one per class, cooked and tasted. Marco teaches flavor; Ruth teaches why it counts for your heart.

03

Your kitchen

Coaching brings the method home: your pans, your grocery store, your potluck. Anita solves the specific recipe on the spot, on the phone.

04

The long table

Sixteen weeks in, most clients report the same thing: regular food tastes over-salted now. That is the palate recalibrating - documented, repeatable, and the whole point.

Client stories

What our clients say

"CHF diagnosis in March, and I mourned food until the blind tasting - where the low-sodium soup won. Six months later I cook better than before the diagnosis, which is a sentence I did not expect to say."

Harold B.
70, Rochester

"My husband's cardiologist said find a dietitian. We found a cooking school disguised as one. We cook together now - the couples discount is that both of us attend free, and the salt stays at the store."

Marion & Gene D.
67 & 69, Kasson

"Restaurant week saved my book club - Anita coached me through three menus by phone. Nobody at the table knew I was eating 500mg under them, and the food was genuinely better."

Frequently asked questions

No - and the blind tasting proves it in the first class. Palates recalibrate in roughly six to eight weeks; the moment regular food starts tasting "too salty" is the moment clients stop needing us.
Then the spouse attends free, and honestly the class is for them. Half our couples: one diagnosis, one cook, one recalibrated kitchen - this is the standard arrangement.
A full class session. Local menus, national chains, the questions to ask, and the ordering patterns that quietly cut 800mg. The restaurant class is the most-attended session we run.
Cooking and menu choices, no; if you are on a salt-restriction medication protocol, we coordinate with your physicians with your written okay. We never adjust medications - that is your care team's job.
The starter spice kit is included in classes and yours to keep - no ongoing sales, no supplements, no auto-ship anything. We sell teaching, full stop.
The coaching, always. The classes are worth the drive - tasting is the method - but we run a video series in deep winter, because this is Minnesota and we are not monsters.
